Sam Choy’s Honey Macadamia Nut Shrimp w/ Spicy Hoisin Glaze Recipe

Mix the first set of ingredients accordingly for 2 minutes, tightly cover and refrigerate at least 30 minutes. Mix the second set of ingredients in a bowl and reserve. In another bowl, hand whip the glaze ingredients and reserve.

Set frying oil to 360 degrees. Evenly coat shrimp with cornstarch and flour mixture and fry until golden brown or shrimp is cooked. Place cooked shrimp in a pan lined with paper towels. Coat shrimp with glaze in a bowl and transfer to a plate. Sprinkle with macadamia nuts and green onion and serve immediately.

First Set

18 Pieces (16/20) shrimp, peeled and deveined with tail off
1 TBSP garlic, minced
2 TBSP soy sauce
1 TBSP olive oil
3 egg whites

Second Set

1 C cornstarch
1/3 C all-purpose flour

Glaze

1/3 C honey
1/3 C Best Foods mayonnaise
2 TSP sriracha chili sauce
1 TBSP olive oil
Kosher Salt, to taste
Water to thin sauce to desired consistency

Garnish

2 TBSP green onion finely chopped
2 TBSP macadamia nuts, chopped
