There are those things in life that just completely blow you away, taking your senses on a heavenly journey when you are in their vicinity. For myself, one of those matters is the aroma and flavor of freshly shaved truffles. At a recent dinner at Drago Centro with dear friend's Peter and Merle Mullin, who also tremendously enjoy fine wine and cuisine, we started off the evening with a personal kitchen tour by Chef Celestino Drago followed by an Italian feast.
To our delight, we were notified of truffles as an addition to the menu. Without hesitation, we ordered Chef Drago's enticing fresh shaved black summer truffles atop risotto as a share course. We enjoyed several bottles of magnificent wines with our dinner, including a stand out bottle of 2006 Lewis Cellars Cuvee L from Napa Valley. The wine was an incredibly spectacular 98% Cabernet Sauvignon and 2 % Cabernet Franc that paired perfectly with the entrancing truffles.
