Workshop: Asian Dumplings with Andrea Nguyen

Take a tour of Asia by making Asian dumplings – from scratch. Celebrated cookbook author Andrea Nguyen will guide you to discover why Asian dumplings are fun, uncomplicated, and wonderfully satisfying foods. You will prepare different doughs, wrappers, fillings, and dipping sauces, then learn to shape handsome dumplings, and finally cook them to perfection. Andrea will help you master Asian dumplings, many of which require only supermarket ingredients. She will also share shopping tips and culinary history from her book, Asian Dumplings, which was recently named by Cooking Light as one of the best Asian cookbooks in the past 25 years.

She will show some eager students how to prepare some of their most popular ice creams from scratch using sustainable, organic and local ingredients. Growing a garden in winter is possible with our mild California climate and not just limited to greens and cabbage. This is an intensive, all-day workshop. We will discuss over 30 different kinds of winter vegetables. Also learn how to battle the cold temperatures, bed prep, winter pest and disease issues, as well as the critical sow dates for winter crops.

In this workshop, Chef Kathy will share lots of great recipes that feature healthy, non-animal proteins. You will explore how to combine legumes and grains, nuts and greens into delicious main courses that provide complete protein nourishment. She will demonstrate many ways to cook tempeh and tofu, as well as other plant-protein based dishes like collard quinoa dolmas with a roasted red pepper dip, tempeh reuben wraps, an esalen nut loaf with savory sauce. Each of the Proteins class features different recipes, techniques, and demos, so previous students will get a continuing education. You will go home with tons of new tricks and ideas to enrich your plant-based repertoire, and enough recipes to last you many Meat-Free Mondays.

Each Farm Dinner is a farm chic dining experience that begins with a farm tour and ends at a bountiful farm table set amidst Love Apple Farms gardens. Enjoy a delicious dinner under the expansive blue sky, with a view of Monterey Bay in the distance. Meander through the vegetable beds, led by a master farmer familiar with the care and culture of the gardens, and later enjoy a meal made with these fresh ingredients.

Come explore the meatless side of Thai cooking. Rather than substituting faux meat or tofu in place of animal protein, Pim will introduce the vast repertoire of vegetable-focused dishes that Thai cuisine has to offer. In this class you will learn how to make holiday garden wreaths using landscape trimmings available in your own backyard! Explore wreath construction in multiple phases: base, body, and decorations, starting with loose landscape prunings and ending with holiday masterpieces! Incorporating wreath-making into your yearly garden cycle also helps reduce your carbon footprint by replacing store-bought decorations with lovely, handmade ones. Woody herbs like rosemary, lavender, or bay laurel make especially fragrant and beautiful wreathes. You will never look at your landscape waste pile the same way again!
